Miso and Jammy Onion Pasta Will Win the Whole Family Over

  • 1 cup broth (chicken, beef, or vegetable, depending on your preference)
  • pepper to taste
  • Spaghetti or another kind of pasta
  • 2 ½ oz. Parmesan cheese, plus more for serving
  • ¼ cup chives

How to Prepare the Pasta?

Step #1: Prepare the Onions Heat the extra virgin olive oil and add 2 tablespoons butter to the pan. Add the onion and salt and cook, stirring, for about 10 to 15 mins.

Step #2: Finish the Sauce Once the onions are well-caramelized, add the garlic and stir for a full minute. Then add the miso. Again, stir constantly for a minute until the mixture begins to stick to the bottom of the pan. Next, add the broth of your choice and stir until the miso has dissolved. Season with salt and pepper.

For this shepherd’s pie recipe, you will need:

  • Around one pound of minced lamb meat
  • Around two pounds of potatoes
  • Two or three medium carrots – chopped
  • One large onion – chopped
  • Three ounces of butter
  • Three tablespoons of milk
  • Two cups of beef stock
  • One tablespoon of sunflower oil
  • Two tablespoons of tomato purée
  • A generous splash of Worcestershire sauce

In a medium saucepan, heat up the sunflower oil and cook the chopped onion and carrots for a few minutes until they start to soften. Then turn up the heat and crumble in the minced meat until it browns. Add the tomato purée and a splash of Worcestershire sauce and fry for a few more minutes. Pour the beef stock over the mince and cover the saucepan. Cook for 40 minutes, uncovering the saucepan halfway through.

Preheat the oven to 356 degrees Fahrenheit. In the meantime, chop the potatoes into chunks and boil them in salted water for 10-15 minutes or until soft. Drain the potatoes and mash them, adding the butter and a tablespoon of milk.

At this point, the pie can be fully chilled and then frozen for up to a month! Bake for around 25 minutes until the top starts to turn slightly brown. Let the shepherd’s pie sit for 5-10 minutes before cutting into it and serving.
